The F&B Assistant Manager is responsible for assisting the Food & Beverage Manager in overseeing the day-to-day operations of the hotel's F&B outlets, ensuring high service standards, guest satisfaction, and efficient team management. This role involves supervising staff, coordinating with kitchen and service teams, managing inventory, and ensuring compliance with health and safety regulations.

Key Responsibilities:

Operational Management:

  • Assist in the daily management of all F&B outlets, including restaurants, bars, room service, and event catering.
  • Ensure smooth operations during shifts, including handling guest complaints and service recovery.
  • Monitor staff performance, ensuring adherence to service standards and operational procedures.
  • Collaborate with kitchen staff to maintain food quality, presentation, and timely service.

Staff Supervision & Training:

  • Supervise, coach, and motivate F&B staff to deliver excellent guest service.
  • Assist in staff scheduling, ensuring proper staffing levels for each shift.
  • Conduct daily briefings, assign duties, and ensure effective communication among the team.
  • Facilitate regular training on guest service, food knowledge, health, and safety.

Inventory & Cost Control:

  • Assist in managing F&B inventory, including food, beverages, and supplies.
  • Monitor costs and control wastage to maximize profitability.
  • Assist in inventory stock takes and maintain accurate records.
  • Coordinate with vendors for timely orders and deliveries of F&B supplies.

Guest Experience:

  • Ensure a high level of guest satisfaction by maintaining a warm, friendly, and professional atmosphere.
  • Resolve guest complaints and handle feedback in a timely and professional manner.
  • Ensure proper execution of events, conferences, and banquets, providing support to the events team when required.

Compliance & Standards:

  • Ensure that F&B operations comply with local regulations, hotel policies, and health and safety standards.
  • Assist in maintaining hygiene, cleanliness, and sanitation of F&B areas.
  • Participate in health and safety audits and implement any necessary corrective actions.

Financial Contribution:

  • Monitor sales and identify opportunities to increase revenue and reduce costs.
  • Assist in preparing daily/weekly/monthly reports on sales, guest feedback, and staff performance.

Collaboration:

  • Work closely with other departments, such as housekeeping, front office, and sales, to ensure seamless guest experiences.
  • Provide support to the F&B Manager in implementing new menu items, promotions, and service strategies.
